1 red bell pepper, diced
1 green bell pepper, diced
1 onion, diced
1 small zuchini, diced
1 cup shredded part skim mozzarella
8 round corn tortilla

Here is how you make Turkey and black bean mexican casserole:

Preheat oven to 350 degrees.Heat 1 tablespoon olive oil in large skillet. Cook ground turkey until no longer pink. Add seasoning mix and water and let simmer for 2-3 minutes.While meat is cooking, combine black beans, canned tomatoes and chili peppers in a large bowl. When meat is finished according to directions add to mixture.In same skillet heat remaining tablesoon olive oil. Add green pepper, red pepper, zucchini, and onion. Cook until softened. Add remaining seasoning mix and stir until coated. Add to mixture in large bowl. Mix well.Cut corn tortilla into bite size pieces (approx. 1 inch pieces). Spray a 9 x 13 baking pan with cooking spray. Cover bottom of pan with half of tortilla pieces. Over that spread half of meat, bean and veggie mixture. Then spread 1/2 of cheese. Repeat this so you have two layers .(tortilla-meat-cheese)Place in oven and heat for 30 minutes until bubbly.
