Add onions and cook until clear. Add garlic. Brown ground turkey in onions/garlic and oil. Add remaining veggies, vinegar and spices. Cook until veggies soften slightly. To soften tortillas, throw approximately three tortillas at a time in a towel and microwave for one minute. Place a large tablespoon of filling into the tortillas, add a small amount of cheese and roll. Place in a prepared baking dish (use spray oil i.e. Pam and also a light layer of Salsa, this will keep the enchillds from sticking and getting hard on the bottom). Repeat until all the feeling is gone. Top with more salsa, to keep it moist and shredded cheese.
