1 medium finely shredded onion with it's juice.
1 tsp cumin powder.
1 tsp black pepper, ground.
3 tsp salt.
* the Kebbeh filling:
500g lean lamb minced.
1 finely chopped onion.
1 tsp ground black pepper.
1 tsp ground cinnamon.
1 tsp ground coriander.
1 tsp turmeric powder.
1 maggi chicken cube.
3 tbsp pine nuts. toasted.
1 tbsp chopped parsley.
3 tbsp extra virgin olive oil.


How Do I Make Palestinian Baked Kebbeh?

Here is how you make Palestinian Baked Kebbeh:

1. Pre-heat the oven 200 degrees Celsius.2. grease an oven dish ( 30cm X 20cm approx).3. The beef meat should be extra ground to be mixed well with the bulgur.3. Strain and strongly squeeze the bulgur between your hands to get rid of the water.4. In a large bowl; put the strained bulgur, the beef meat, finely shredded onion with it's juice, cumin powder, salt and the black pepper and mix together with your hand to form a good mixed sort of a dough.5. divide the bulgur dough into two balls. Spread on of the balls evenly in the greased oven dish. (Damp your hand with cool water and wipe the surface to smooth it).6. In a saucepan or wide pan, add the chopped onion and leave to soften for 5 minutes on a low heat.7. add the minced lamb meat and leave to on a low heat for about 7-10 minutes. Get rid from any juice comes out of the cooked meat to get rid of the fat too.8. add the salt, maggi cube, the black pepper, cinnamon powder, the coriander powder and the turmeric then stir properly to cover all the meat with the spices for 5-7 minutes.9. Turn off the heat then add the pine nuts and the fresh chopped parsley and stir. Leave to cool down for 10 minutes.10. spread the filling over the first bulgur layer, then cover it with the second layer of the bulgur ball and repeat step 5 to smooth the surface.11. spray the 3 tbsp of olive oil on the surface and cover the dish with aluminum foil to avoid dryness while baking and bake for 30 minutes.12. just at the last 7 minutes remove the foil to golden the Kebbeh.13. You can prepare the Kebbeh without baking and freeze it for several weeks. To bake it just defrost the kebbeh in the kitchen temperature then put it in the pre heated oven.
