How Do I Make wheat Challah bread?

Here is how you make wheat Challah bread:

Combine yeast, sugar, and 3 cups warm water in a bowl to prove yeast. Mix all remaining dry ingredients in bowl of a large stand mixer. Slowly add water/yeast mixture along with oil vinegar and eggs. Mix on low speed with hook attachment for 10 minutes until dough forms smoothe ball. Divide dough into 3 even portions and sparsely flour a clean countertop. Roll each portion of dough into a "snake" about 24 inches long. Use parchment to line or lightly grease a large cookie sheet.(about 11x13 inches) Overlap ends of all 3 pieces and press together. Braid "snakes" on counter and when finished press together other end. Gently tuck ends under and transfer loaf to prepared baking sheet. Position loaf diagonally ensuring at least 1 inch on all sides. Cover completely with plastic wrap and set in a warm place. Dough will rest 2 hours. After 1 hour, begin to preheat oven to 375. After dough has risen, it should have increased by at least double and should go to into corners of the pan. Whisk egg white and remaining water and brush liberally over entire loaf. If desired lightly sprinkle kosher salt onto loaf immediately before baking. Bake 45-55 minutes until deep bronze in color and crust is hard when tapped with a spoon. Remove loaf to a cooling rack and cool completely prior to cuttung. A loaf approximately 14 inches long will yield about 56 1/4 inch thick slices.
