The ingredients for Amaretto Love Cheesecake are:

Crust:
1 cup (250ml) almonds
1 cup (250ml) vanilla "Nilla" wafers
1/3 cup (75ml) unsalted butter melted. (I have used margarine but the unsalted butter will cut down on the sodium)

Filling:
1-1/2 tbsp (25ml) unflavoured gelatin (1-1/2 envelopes Knox brand)
1/4 cup (50ml) water
3 eggs, separated
1-1/4 cups (300ml) Splenda
1 cup (250 ml) warm milk
1 lb. (450grams) chilled cream cheese
1/4 tsp.(1 ml) almond extract
1/3 cup (75ml) Amaretto liqueur
2 cups (500ml) lite whipped topping

Garnish:
whipping cream (reserved from filling above)
3 tbsp (45ml) Amaretto liqueur
2tbsp (30ml) sifted icing sugar
1/4 cup (50ml) sliced almonds, toasted.

Here is how you make Amaretto Love Cheesecake:

Makes 16 servings in a 10 inch springform pan.1. Fit your food-processor work bowl with the steel knife. Add almonds and process on/off, on/off until coarsely chopped. Add Vanilla Wafers and process until fine. Blend in butter until crumbs are moistened. Press mixture into bottom and partly up the sides of a 10-inch(3.5 L)springform pan. Refrigerate. 2. Place 1/4 cup(50 mL) water in a medium-sized, heavy saucepan. Sprinkle with gelatin and let stand for 5 minutes. 3. Rinse and dry the work bowl of your food processor and the steel knife. Add egg yolks and 1 cup(250 mL) sugar. process immediately until light in colour. Add warm milk through feed tube and blend. 4. Dissolve gelatin over low heat and stir milk & egg mixture into gelatin, cooking over low heat until mixture begins to thicken. Cool for about 5 minutes. 5. Cut cream cheese into cubes and add to food processor work bowl. Add almond extract and liqueur and blend. Slowly add the custard, blending and scraping down sides of bowl. 6. Pour mixture into mixing bowl set into larger bowl filled with ice cubes. Stir occasionally to prevent setting around the outside edges. Cool until mixture is thick and syrupy. 7. Beat egg whites, adding 1/4 cup(50 mL) sugar, until stiff. To lighten the gelatin/custard mixture, stir 1/3 of the beaten egg whites into it first, then fold the custard mixture into the remaining egg whites and 2/3 of the lite whipped topping. 8. Turn mixture into the prepared crust and refrigerate. 9. To the remaining topping add icing sugar and liqueur. Pipe or spoon cream attractively over the cake. Sprinkle the top with sliced toasted almonds and refrigerate the cake for 2 to 3 hours before serving. Cheese cake can be prepared ahead of time and freezes well.10. If freezing allow at least 2 hours to thaw before serving.
