-2 lbs. boneless skinless chicken breast, frozen and cut into bite sized pieces
-1C red onion chopped into small pieces
-2 C cooked, chopped fresh broccoli(you can cook this with the chicken if you don't have any cooked already)
-1 1/4 C fat free chicken broth like Aldi's Fit n Active
-1 can cream of mushroom soup (I use Aldi's Chef's Cupboard)
-2 small cans of mushrooms, drained (makes about 1 C total)
-1 bag Success Boil in the Bag Brown Rice
-4 oz, 1/3 less fat cream cheese

Here is how you make Rumbamel's Chicken and Rice with Broccoli and Mushrooms:

--Chop the broccoli, frozen chicken and onions. Measure your broth, drain the shrooms, and cut the cream cheese in cubes.--In a large pot put the broth, onions, chicken and broccoli if you are cooking it. Bring to a boil, stirring often and cook until the chicken is done. When done remove the chicken, onions and broccoili if cooking and use the 1 1/4 C remaining chicken broth to cook the rice.--Cut the bag of rice open and dump into a large glass dish and add the broth. Stir and then microwave on high for 10 minutes uncovered.--Return your chicken, onions and cooked broccoli to the large pot. Add the cream of mushroom soup and mushrooms and stir well. When the rice is done, add it as well and the cubed cream cheese, stirring well over low/medium heat until creamed and mixed well.--Makes 8 servings of 1 C each.--Enjoy!!Number of Servings: 8Recipe submitted by SparkPeople user RUMBAMEL.
