5 Chicken Thighs, bone and skin removed, cut in small pieces

Olive Oil, 1 tbsp

1 medium red onion

Garlic, 3 cloves

1 small to medium zuccini squash, diced

1/4 C. Dry White Wine

1 Cup Black Beans, canned

1 tsp Curry powder

1 tsp. Cumin powder

1/2 tsp. freshly ground black pepper

1 tbsp. Mrs. Dash spicy chipotle pepper

1/4 C. fresh chopped Cilantro

2 Tbsp. lime juice

1 teaspoon (or to taste) your favorite hot sauce


How Do I Make Spicy Chicken Salad?

Here is how you make Spicy Chicken Salad:

Makes 5 ample servings I poached the chicken first then added it to the onions, but you can saute the chicken with the onions and garlic if you want. Saute all but 2 tbsp.onions and garlic in the olive oil. When onions are soft, add the chicken, wine, curry, cumin, chipotle and black pepper. You could use a little more wine (I did the second time). Just before wine is completely reduced, stir in 1/3 of the zuccinni and about 2/3 of the black beans. Warm through, then remove from heat. The dressing is the secret here. I used my magic bullet, put the remainder of the black beans, the lime juice and the hot sauce into a food chopper and puree/liquefy.
