1 medium yellow onion, chopped

Soak beans overnight.Cook quinoa same as rice (1:1.25 quinoa to water ratio). Set asideSautee mushrooms until they begin to wilt. Add chopped onions and cook 2 minutes. Add bell pepper and cook 2 minutes. Add minced garlic and cook two minutes.Add chili powder, cuming, and any additional seasons you want. Turn up heat and sautee in spices. Add the beans, tomato paste, chopped tomatos, and vegetable stock and quinoa. Bring to boil then reduce heat.
