Here is how you make Enchiladas:

Brown ground turkey. Drain excess. Add chopped onion (more or less depending on your liking). Add chili powder or cayenne pepper (or omit). Let that cook about 3 minutes (gives onions a chance to soften a little). Remove from heat. Add cheese and enchilada sauce. Mix. Use regular spoon and take 3 heaping spoonfuls and spread on tortilla. Cover 3/4 of tortilla to leave clean edge when you fold (won't squeeze out of seam). Place either fold up and put a toothpick in or put fold down. Take remaining mixture and spread on top of all the tortillas. Bake at 375 for about 15-20 minutes.
