You don't need a lot, the oil adds fat/calories quick so just enough to sautee the onion. 2) Add onion and let it cook down a bit 3) Toast english muffins (optional) 4) Add portobellos to cooked down onions 5) Once portobello caps are warmed through, add balsamic. I coat both sides of mushrooms and the rest drips and cooks through onions. Balsamic vinegar has lots of sugar so be cautious using it if that's a priority for you. 6) Add tomato slice and cheese to toasted muffins, then top with a portobello cap and onions. Warning: Sandwiches are messy! You can substitute a more substantial roll and only eat one sandwich if you prefer.
