Yummy moist carrot cake that has flavors of cinnamon, orange zest, pineapple and apples! Served with no frosting (i know!) because in my opinion there is no need for it, what can i say i am Asian :)good to eat for breakfast and will make you feel less guilty then if you were to eat a regular monster carrot cake, calculating up to 1000 calories!!! I used olive oil instead of butter as well as applesauce. Now at only 224 calories per serving!!

Here is how you make Healthier Carrot Cake:

1)Preheat oven to 350 degrees. Cover olive oil in a 13-inch x 9-inch baking pan.Combine flours, cinnamon, orange zest, salt, in a large bowl. Stir with a whisk. In another bowl, beat egg whites until soft peaks form. Beat in white sugar and raw sugar and egg yolks followed by the applesauce and vanilla. to make your buttermilk, (its easy!) for 1/2 cup of low fat skim milk and white vinegar, mix a little with a spoon and let it stand for 5-10 minutes till curds form.Add to flour mixture and stir until just moist. Stir in the pineapple, carrots. Spoon batter into baking pan and bake for 35-40 minutes, until a toothpick inserted in the center comes out clean.
