You could also do this recipe as cupcakes or in a loaf pan.Grate the beets using a box grater or food processor. Once they are grated, mix with honey, orange juice, vanilla extract and ginger (ginger should be minced finely or grated using a small grater) and let sit. In a separate bowl, mix the flour, baking powder and sugar. finely chop or grate the butter into the dry ingredients and mix until the butter pieces are no larger than a pea. Beat the egg into the wet ingredients and stir the wet ingredients into the dry ingredients. Don't mix too much or the gluten in the flour will make the cake tough.
