In hot skillet melt butter & margarine. Add choppped onion; green pepper; garlic and sautee until green pepper is bright in color then add cilantro and parsley. Stir in lemon juice and veggie burger crumbles. Stir in lemon juice add salt, pepper, chili powder or chipotle pepper to taste. Add 1 tblsp. taco seasoning (if desired). Add 1 C. brown rice and 1/2 C. water. Stir all together. Turn heat to low and let cook covered for 8 minutes.
