Wash 1 cup uncooked wheat berries and bring to boil with 3 cups water. Reduce heat and simmer for 1 hour. Berries will expand to aprox. 2 cups and will be slightly chewy. Drain and rinse with cold water. Stir in remaining ingredients. Cover and refrigerate for at least one hour before serving. Makes 12 1/2 cup servings.
