1 cucumber, sliced
2 green onions, sliced

3/4 Tbs. poppy seeds
1/2 T. yellow mustard
3/4 cup light olive oil
1/3 cup rice vinegar
1/3 cup sugar

Toss all salad ingredients together. I serve with Fat Free/Sugar Free poppyseed dressing ( you can use dressing recipe included here as optional or dressing of your choice)If you want to add the carmelized pecans: put 3/4 cup sugar in a large skillet, place nuts on top. Heat over med-high heat until sugar starts to melt. Stir with wooden spoon. (Caution: Sugar will burn quite easily--remove from heat and stir til coated) Transfer to a cookie sheet to cool.
