Preheat oven to 400. Cook bacon in a large oven-proof pot or dutch oven over medium heat until crisp, stirring occasionally. Using a slotted spoon, transfer bacon to paper towels. Add onions to drippings in pot and cook until beginning to brown, stirring often, about 8 minutes. Add garlic, stir 1 minute. Add remaining ingredients plus reserved bacon and bring to a boil.
