Finely chop the onion and peppers, set aside.Heat olive oil in a four quart saucepan. After the oil has warmed, place the peppers and onions into the saucepan and sautee until the onions are translucent over medium heat. Add kosher salt and pepper to taste. Once the onion and pepper mixture has cooked for about five minutes, drain the canned tomatoes and place the tomato chunks into the pan along with the pinto beans.
