1 lb prepared polenta (I used Melissa's Orangic Original)
2 tablespoons light butter
3 tbsp unbleached all-purpose flour
1 cup skim milk
5 oz grated part-skim sharp cheddar cheese
1 teaspoon salt
1/2 tsp white pepper
dash of nutmeg


How Do I Make Baked Cauliflower Polenta?

Here is how you make Baked Cauliflower Polenta:

Preheat oven to 350?F.Spray a 13x9-inch square baking dish with cooking spray, set aside.Bring a large pot of water to a boil.Trim cauliflower and break into small florets.Boil the cauliflower until tender (about 10-15 minutes).Take out the cauliflower and place in a food processor and puree until thick and smooth. Set aside.Break polenta into small pieces and put in pot with 1 cup of water and put over medium heat. Stir occasionally. This will help mush it up.For the sauce, melt the 2 tablespoons of butter in a medium saucepan over medium heat.Add the flour and whisk briskly.Gradually add 1 cup milk, whisking continuously, until it reaches a boil.Reduce the heat and simmer for 3 minutes, or until thick and bubbly.Add the pureed cauliflower, 1 cup cheddar cheese, salt and black pepper.Whisk until smooth and remove from heat.Add sauce to polenta and stir together.Pour into the prepared 9x13 baking dish.Bake for 30 minutes or until golden brown on top and the cheese sauce is bubbling around the edges.Serving Size:?6
