Break cauliflower into small florets. Cover with water and cook until tender.Meanwhile, cook bacon. Drain on paper towel. Break into small pieces. Reserve about 1/3.Finely chop onions.When cauliflower is cooked, mash.Stir in onion, cream cheese, parmesan, sour cream and 2/3 of bacon.Put into greased casserole dish.Shred cheddar and sprinkle over top of cauliflower.
