2 lbs. fresh green beans, washed and prepped
1 lb. bacon, chopped
1 lb. yucan gold potatoes, peeled and chopped
1 large onion, chopped
4 cloves garlic, chopped
salt to taste
water to cover


How Do I Make Country Green Beans?

Here is how you make Country Green Beans:

In the bottom of a large pot, sautee the bacon pieces until slightly crunchy. Remove. Sautee onions (in bacon fat) until tender. Remove. Sautee potato chunks about 5 minutes. Add garlic, cooked bacon, onions, and green beans to pot. Cover with water. Bring to boil, stirring occasionally. Cover and simmer for 2-3 hours depending on desired crispness of the green beans.Add salt to taste. The potatoes soak up a LOT of salt, so be generous. We usually add between 2-3 tbsp salt, but that's just us. Tony Chachare's is also a nice addition for a little kick.About 12 servings. Additional notes: If you are making this for a special occasion (like Thanksgiving), it is great to do a day or two ahead and refrigerate. Then on the day of, you can skim the fat off the top (always a good thing to do) and reheat on the stove. Also, you can use canned green beans, but fresh are much better. Canned tend to become too mushy during the simmering process.
