Here is how you make Coconut Bread Pudding:

Preheat oven to 350 degrees. Grease a loaf pan with coconut oil. In a medium mixing bowl, slightly beat eggs. Add remaining ingredients and mix well. Pour into prepared loaf pan.Bake for 40 minutes. Cool slightly. Turn out onto a rack to finish cooling. Cut into 1/2" cubes.Reduce oven to 200 degrees. Spread bread onto a baking sheet. Bake for 1 hour to dry out cubes. Set aside.Increase oven temperature to 350 degrees. Grease a 2-quart glass casserole.Pour coconut milk into a large mixing bowl and whisk until smooth. Add eggs, 3/4 cup of Swerve, vanilla, allspice, and 1 tsp. cardamon. Whisk to combine well. Add bread cubes and toss until well coated.
