I wanted to show that my toaster oven was useful for more than just small warm-ups and toast. I tried a corn bread and I was very pleased with the results. Obviously, this can be done in a full size oven, but It worked well. Oh, and I used my Magic Bullet to make Oat flour. How cool is that?

Put the Oatmeal into a blender or food processor and process until it forms a powder. Add to a bowl with the cornmeal, salt, sugar, and baking powder and stir to blend. Add the soy milk, egg, and applesauce and stir until blended. Add it chili powder if desired.Pour batter into a 6 x 8 that fits into your toaster oven.
