Cover with a towel (Make sure the yeast is not outdated). It should rise up to the top of the cup.OR You can use yeast packets such as Kwik Rise. These packets can be added right into the dry ingredients. Melt ? c. butter. Then, beat 1 c. sugar with the butter. In a separate container, beat 3 eggs (4 eggs) and 1 tbsp. vanilla. Add to mixture and beat again. ALTERNATE INTO MIXTURE 2 cups warm milk and yeast (mixture can be added at one time) with 6 to 7 ? c. flour and 1 tsp. salt. KNEAD for 10 to 15 minutes. Place the dough into a large, greased container (plastic is recommended ? not sure why). Cover with a towel. Let rise for 1 to 2 hours until doubled in size. Punch down the dough and set a little bit aside for crosses. Divide dough into greased pans using just enough to fill ? of the container. Can use round or loaf pans. TO MAKE CROSSES roll out the set-aside dough and place in cross shapes over each loaf. Let rise 1 to 2 hours. Brush the top of each loaf with a beaten egg or olive oil to get a nice golden brown color.
