Pour into the center of the oatmeal mixture.Add and one cup of flour and mix well. Place in a warm place with a damp cloth over the bowl and allow to rise until it bubbles (about 45 mins)-this dough is called the "sponge".Add remaining flour and flax meal- Mix thoroughly and add cinnamon and egg as well as the applesauce. Cover with a damp cloth and place in a warm pot to rise for about 45 mins. Punch down dough and knead on a slightly floured board (try not to add too much flour and oil your hands if necessary) until dough is elastic.Place dough in an oiled bowl and turn over to coat in oil. Place in a warm spot with a damp cloth until dough has doubled in size (about 45 mins). Separate dough into two and shape in to loaves and place loaves on oiled pans. Bake for approximately 40 mins at 350 degrees or until golden-should sound hollow when you tap on the loaf.
