2 packets active dry yeast
1/4 Cup olive oil
1 Tb salt mixed with 1 Tb water
2 1/2 cups warm water
3 oz unbleached flour
cornmeal for garnish


How Do I Make Ancient Bread?

Here is how you make Ancient Bread:

Let yeast stand in 2.5 cups of warm water. Weigh 2 lbs of flour. put whole wheat and rye flour in first and remainder of weight with unbleached. Whip 4 cups of flour into the yeast mixture (which should have bloomed by now). Whip for 10 minutes. Add 1 Tb water to 1 Tb salt, stir and add to mixture. Whip. Then slowly add remainder of flour. You may need an additional 3 oz of unbleached flour.Knead or use a dough hook until the dough pulls away from the bowl. Cover, let rise. Punch, and repeat. After 2nd rising, separate into 2 loaves and spread on a cooking sheet that has been lightly sprinkled with corn meal. Cover, let rise.
