4 cups of flour total: I used 2 cups of whole wheat flour and 2 cups of unbleaced white flour

4 tsp double acting or 8 tsp single acting baking powder

2 tsp. salt

1/2 cup of extra virgin olive oil

Honeyed Water: 1/2 cup each of honey, milk, and water


How Do I Make Emmaus Altar Bread?

Here is how you make Emmaus Altar Bread:

Sift the dry ingredients together in a bowl. Mix the oil into the honeyed water (you may have to warm the honey to get it into a liquid form). Pour as much of the honeyed water/oil mixture into the flour to create a smooth, soft dough, not too sticky to handle. Turn the dough onto a lightly floured surface and kneed gently. Taking the dough in pieces (about six per batch) roll the dough to about a 3/16th thickness and cut the dough into the desired shape (for communion I use a 6" metal bowl - this size is enough for 25-60 communicants) there are very few crumbs with this "loaf". Transfer the loaves to a lightly greased baking sheet or stone and gently cut a cross into the surface of the dough before placing into a 400 degree oven for 10 to 15 minutes. Let the bread cool on racks for 1 hour. Wrap individual pieces in cellophane, and refridgerate. Take out about an hour before using. Loaves may also be frozen - remove the night beforehand to thaw.
