3 cups Unbleached, unbrominated white flour
3 cups Whole Wheat Flour+ extra for kneading
3/4 cup Muesli, (such as Bob's Red Mill)
2 1/2 cups warm (not hot!) water
1/4 cup honey
1/2 cup Sourdough Starter (active) (50% hydration)
2 tsp Seasalt
1 package active dry yeast


How Do I Make Muesli-Wheat Sourdough Bread?

Here is how you make Muesli-Wheat Sourdough Bread:

Makes 2 loaves, 20-24 slices each.If using a bread machine, follow the bread machine manufacturers directions for adding wet and dry ingredients. Add the sourdough starter with the wet ingredients. Prepare on the dough setting.Turn out onto a lightly floured worksurface and form into a ball.If mixing by hand...Add the water, honey, sourdough starter, yeast and salt to a large mixing bowl, stir until combined.Add the flour alternating whole wheat and white, 1 cup at a time. Stir with a wooden spoon until too stiff to stir.Knead in the rest of the flour and muesli.Turn out onto a floured worksurface, and knead for 10-15 minutes until a piece of dough can be stretched thin enough to see light through it. Form into a ball.Bread machine and Manual knead both follow on from here:TIP FOR KNEADING: Use only as much flour as you need to get the bread to the point where it sticks to itself instead of to you and your counter top. This will vary every time you make bread depending on how much moisture is in your flour, the air, and how accurate your measurements were. It's not an exact science!Let stand for 10 minutes.Cut into 2 balls, and form each into a tight ball.Place each on a bakers sheet, and set aside to rise.Once risen to double the size (about 1 1/2 to 2 1/2 hours depending on how warm your kitchen is and your altitude), bake in a hot (375F) oven for 40-45 minutes until hollow sounding when tapped on the bottom.Allow to cool for best slicing experience!I recommend slicing with an electric knife as this does the least damage to the slices Number of Servings: 48Recipe submitted by SparkPeople user MOOREA7.
