1/2 Tbsp Lecithin
1 tsp salt
1 Tbsp yeast (scant)
3 Tbsp powdered milk (optional)
1 egg - room temp
2 Tbsp x-virgin olive oil
1/4 cup honey
1 1/4 cup warm (130 degrees) water

Here is how you make Whole Wheat Bread Recipe (Freshly Milled Wheat):

Place bread ingredients in bread machine in order stipulated by your machine's owner's manual. Bake as directed on Basic Wheat settings OR set cycle on manual and remove dough when finished. Shape into a loaf and place into a well greased loaf pan. Let rise about 30 minutes. Preheat oven 350°. Place gently on bottom shelf of oven. Bake 20 minutes, then turn the loaf pan carefully front to back and lay a piece of foil over the top of the loaf. Bake an additional 10 - 15 min. Test for doneness. Cool on wire cooling rack positioning the loaf so that the grid makes guidelines for slicing. When completely cool, place in a plastic bag for 2 hours to soften crust. Slice evenly. Re-bag teh loaf with enough room for the slices to be loose. Freeze loaf on its side. Use for toast or sandwiches straight from the freezer.I use a bread slicing guide and get 16 slices per loaf.You can use this recipe for hard white or hard red wheat but be sure that it is HARD wheat berries.
