In a large pan, melt the butter, and then add onion, carrot, garlic, and apple. Saute until the onions are translucent, about 5 minutes. Add the honey and caraway seeds, toss to mix. Add cabbage and apple cider and stir to mix. Cover, stirring occasionally for 15-18 minutes or until the cabbage is soft. Add the vinegar and stir uncovered until the liquid has evaporated, 2 to 3 minutes.
