Slice cabbage in half. Remove core. Thinly slice cabbage as if preparing cole slaw, but do not dice. Loosen long shreds in a mixing bowl. Melt butter and oil over medium high heat. Gently add cabbage in four parts, mixing gently after each addition to coat cabbage in butter. Add salt and pepper once all the cabbage is in the pot. Cover. Toss occasionally to make sure the cabbage is cooked evenly. When desired texture is reached, pull off the flame and serve immediately.
