4 med tarty apples (Granny Smith). Peeled (optional) but thinly sliced.

2 onions (I use yellow), cut in half, then thinly sliced.

1 small head of red cabbage (or 1/2 head of large). thinly shredded

Sautee each ingredient until each is soften separately in minimal amount of olive oil. Do not brown the onions.

After you have sauteed the cabbage, add 2 to 4 tablespoons of apple cider vinegar. This will change the color of the cabbage to a pinkish color.

Toss ingredients first (raisins are optional), then add to a 9x13 baking pan and cover loosely with aluminum foil. Bake for 30 mins at 350.
