Here is how you make Daikon and Carrot Pickle from Viet World Kitchen:

Put prepared Daikon and carrots into a large bowl. Sprinkle with salt and 2 tsp. granulated sugar. Massage into the vegetables for about 3 minutes, until you can bend the radish so the ends touch, but it doesn't break. Rinse well.In a small bowl, mix together the vinegar, warm water and 1/2 Cup granulated sugar, stir until sugar dissolves. Pour over the carrots and Daikon, be sure the liquid covers the vegetables well. Stir.Let sit at least an hour. Store in refrigerator for up to 4 weeks. Brine may be re-used for next batch of pickles. Serve on lettuce wraps with your choice of meat, cucumber slices, jalapeno slices and a drizzle of sriracha.
