1 c. onion, diced
1 c. bell pepper, diced
1 c. celery, diced
1 lb. shrimp (raw)
4 T. I can't believe it's not butter
1/2 c. bread crumbs
1 tsp. each garlic powder and cayenne pepper (adjust to taste)
Salt and pepper

Here is how you make Mirliton Casserole:

Boil chayote squash (mirliton) for 30-40 minutes with 1 tsp. salt and 1 tsp. cajun seasoning (Tony Chacherie's.) Drain, slice in half, take seed our and mash or puree in a food processor. Melt "I Can't Believe it's not Butter" in a pan, add bell pepper, onion, and celery, cook until tender. Season shrimp with 1 tsp. Tony's, 1 tsp. cayenne pepper and 1 tsp. garlic, add to vegetables and cook until shrimp are pink. Add chayote squash (well drained) and cook for 3 minutes. Add bread crumbs.
