Here is how you make Creamy Carrot Casserole:

In a micro-safe casserole dish, cook the carrots in 2 T. water, covered, for 6-8 minutes or until tender. Drain. In a small mixing bowl, mix the mayo, onion, horseradish, salt, and pepper. Add to carrots and stir to combine. In another bowl, toss together the crushed crackers, melted margarine, and parsley. Sprinkle the cracker mixture over the carrots. Return to the microwave and cook on high, uncovered, for 3 minutes. Add cheese on top and cook 1-2 minutes more or until the cheese is melted.
