How Do I Make Zucchini Carrot Casserole?

Here is how you make Zucchini Carrot Casserole:

Wash, slice and quarter zucchini. Parboil zucchini and chopped onion in salted water for 5 min. (I do this covered in a glass bowl in the microwave) Drain well. Mix soup and sour cream together, add carrots and then mix with zucchini. Melt butter & add stuffing. Mix well. Put 2/3 of stuffing in bottom of buttered 1 qt. casserole. Spread zucchini mixture over it and place the remaining stuffing crumbs on top. Bake at 350 for 30 minutes.
