1 slice bacon, crisp, drained, and crumpled (optional)
2 Tbsp per person low fat sour cream (40 cals, 2 g saturated fat (optional)

Preheat oven to 350Wash and segment the cauliflower, Steam for 25 minutes until VERY tender. Drain well and pat dry.Combine cauliflower, butter flavor spray and ricotta chese in mixing bowl and blend well. Taste and add salt, low fat sour cream, pepper and garlic powder to taste.(Start with 1/2 teaspoon salt and 1/8 each of pepper and garlic and go from there).Stir in 1/4 cup low fat cheese. Pour mixture into baking dish and top with remaining shredded low fat cheese.
