Here is how you make Carla Hall's Low Fat Mac n Cheese:

Preheat oven to 375 degrees. Cook pasta al dente in lightly salted water. Tear bread into small pieces, put on baking sheet, and spray with olive oil spray & sprinkle with salt. Bake for 7-10 min. until toasted and brown. Toss parsley and black pepper and set aside.Combine flour, mustard, salt, and paprika in a pot. With heat on medium, slowly pour in milk while whisking. Add onions and bay leaf. Bring to simmer and stir in cream cheese. Whisk until smooth and simmer for 2 minutes until thick and creamy.Take the sauce off the heat, remove bay leaf, and stir in cheddar cheese until melted. Pour over macaroni.
