First, preheat oven to 350?F and coat casserole dish with non stick spray.Next, in a medium bowl put 1.5 cups of quinoa(after you've washed it) & 3 cups chicken broth in a microwaveable bowl for 6 minutes. Stir and cook another 2-6 minutes and let it set. Prep the onion and garlic while quinoa is cooking.. Dice garlic and onion and set aside.Bake bacon in the oven until crispy. Save a small bit of bacon grease and add to a saute pan. Put on a paper towel to drain grease. Let them cool and then chop bacon.Saut? onion and garlic in bacon grease on medium for about 8 minutes(or until brown)For cheese sauce put 2 cups of milk(I use 2%) in a pan. Add corn starch and stir, until boiling. Cook on medium low until the mixtures thickens. Stir it constantly! Add your cheese and stir. another 10 minutes.Add the quinoa, bacon, sauteed onions and garlic. Stir until well mixed.
