How Do I Make Indonesian Style Rice and Chicken Sauce?

Here is how you make Indonesian Style Rice and Chicken Sauce:

Prep the onion and the garlic.Heat oil over medium heat. Once hot, saute onions until golden. Add garlic and saute until slightly browning, taking care not to over-brown the onions in the process.Add the soy sauce and rice vinegar and stir well. Add the chili powder and the lemon grass, and stir. Add the water, stir well. Cook on a lower heat for 3-4 minutes, stiring occasionally. Serve over Basmati Rice or use as a sauce/dip for chicken satay. *reduce the amount of oil used for significantly less fat and calories(the oil is where almost all the fat and calories in this recipe come from). Start with 1 tbsp and work your way up as needed or as to your liking.**the nutritional info for this recipe is valid when using LOW SODIUM soy sauce. Use regular soy sauce for true flavor. The sodium content will be higher, though.***If you like stronger vinegar flavor, use 2.5 to 3 tbsp. If not, use1.5 -2 tbsp. If you can't find rice vinegar, use regular white vinegar, but know that it may change the intended flavor.****I use a chili powder caled "Chili con Carne" from Penzeys Spices which has no salt and barely any heat. Choose your chili powder according to how hot you want your sauce...but i'd recommend one with very little salt, since the soy souce adds well enough sodium.*****You can find a proper recipe for Chicken Satay on the web, however, I simply use Sate seasoning(by Penzeys Spices) to coat my boneless-skinless chicken thighs and sautee the meat in 2 tbsp of olive oil until done. Experiment with the sauce to see what kinds of meat and rice dishes work with it that suites your taste.******As a garlic lover myself, I'm sure adding an extra crushed clove or two wouldn't hurt!Number of Servings: 4Recipe submitted by SparkPeople user CRYSTALBREEZY.
