What Are The Ingredients For Chinese Chicken Salad Recipe?The ingredients for Chinese Chicken Salad are: Salad4 chicken breasts Olive oil Salt Pepper 1 pound of asparagus, ends removed, cut into thirds diagonally** 2 bell peppers – (can use any color) 4 scallions – sliced diagonally * Chinese snow peas - can use these to replace the asparagus Water chestnuts – sliced Chow Mein Noodles Dressing 1 cup Vegetable oil ¼ cup apple cider vinegar 1/3 cup soy sauce 3 tablespoons dark sesame oil (NOTE: it is not called dark sesame oil it is just sesame oil but make sure that it is the dark (brown) one) 1 tablespoon honey 2 garlic cloves –minced (or 1 teaspoon of minced garlic) 1 teaspoon peeled, grated fresh ginger 1 tablespoon white sesame sees, toasted (NOTE: To toast the seeds, place them in a dry sauté pan and cook over medium heat for about 5 mints or until browned) ½ cup smooth peanut butter 4 teaspoons salt 1 teaspoon pepper How Do I Make Chinese Chicken Salad?Here is how you make Chinese Chicken Salad: Preheat oven to 350°Place chicken breast on a sheet pan and rub with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 -40 minutes. Set aside to cool. When cooled enough to handle, shred chicken into large bite size pieces. Blanch the asparagus in a pot of boiling salted water for 3-5 minutes until crisp-tender. Plunge into iced water to stop the cooking. Drain. Cut the peppers into strips/ bite size pieces. Combine the chicken, peppers, asparagus, snow peas, and water chestnuts in a large bowl. Whisk together all of the ingredients for the dressing and pour over the chicken and vegetables. Add the scallions and sesame seeds and Chow Mein Noodles when ready to serve.
