What Are The Ingredients For Kickin Collards Recipe?

The ingredients for Kickin Collards are:

One bag of chopped collard greens (10 oz bag), rinsed with any large ribs removed (they may be some hard stem pieces)
1/2 tbsp olive oil
2 garlic gloves, chopped
1 large onion, chopped
2 cups of vegetable broth
red pepper flakes, to taste
salt and pepper, to taste
dash or two of liquid smoke


How Do I Make Kickin Collards?

Here is how you make Kickin Collards:

Heat large stock pot or soup pot over medium-high heat. Add 1/2 tbsp olive oil. Add chopped onion and saute for approximately 3-4 minutes or until starting to turn translucent. Add chopped garlic and a dash or two of liquid smoke and saute until fragrant.Add rinsed and picked through greens to onion mixture, tossing to coat. Cook for approximately 5 minutes, tossing occasionally, until greens are cooked down. Add vegetable broth, salt, pepper and red pepper flakes (start off with only a small amount - you can always add more after they have cooked). Cover, turn heat to low and simmer for approximately 45 minutes or until greens are tender. (I usually cook much longer but I like my greens very soft).You can also use a fresh head of collards but make sure you remove all the hard ribs on each leaf. The chopped bagged collards are just quicker for me but I even pick through those to discard any stems or ribs of the leaf. This is something I make every few weeks and have to make a double batch because my husband and I eat it as a side dish, make sandwiches with it (love it with extra hot sauce in a sandwich) and even like them for breakfast with eggs.Number of Servings: 4Recipe submitted by SparkPeople user TINKYMOE.
