Add 1/2 cup granulated white sugar to the vinegar and heat to boiling, stirring until all the sugar has dissolved. Boil supersaturated mixture for one minute, then remove from heat. While vinegar mixture cools slightly, thinly slice the cucumbers. (My mom thought that the thinner the slice, the better they taste, but thinness is really a matter of choice.) Place sliced cucumbers in storage container. Chop 1/2 cup of white onion (red does not provide the right flavor) and add to cucumbers. Pour vinegar/sugar mixture over cucumbers/onions and stir gently to mix ingredients. (Vinegar mixture will still be warm.) Cover storage container and refrigerate for at least 4 hours, although overnight is better. When ready to serve, remove container from refrigerator, gently stir and serve. Makes 8+ 1/2 cup servings.Number of Servings: 8Recipe submitted by SparkPeople user RUTHIEZ20.What's The Nutritional Info For Judy's Summer Cucumbers? The nutritional information for Judy's Summer Cucumbers is:
