Ingredients :
2 Large egg yolks
1 Whole large egg
1/2 cup Olive Oil
1/2 cup Coconut Oil, melted
1 Tbsp Dijon Mustard
Juice of 1 Lemon
1 Tbsp Plain Greek Yoghurt
1 tsp salt
1 tsp freshly milled pepper
1 Tbl chopped chives (added last)
1/4 tsp finely chopped Garlic

Method:
Melt the coconut oil in a bowl using a microwave or a small pot on the stove. Squeeze the juice from the lemon and chop the chives finely. Seperate the 2 egg yolks and keep aside.

Place all the ingredients into the jar except for the chopped chives. With a stick blender, using the correct attachment for making mayonnaise, blend all ingredients at high speed for a few seconds. It should emulsify and turn into a creamy mayonnaise almost instantly. Stir, adjust seasoning according to taste and add the chopped chives.
