1 (6 oz.) can tomato paste
2 tbsp fresh Basil (or 2 tsp dried)
salt & black pepper to taste
6 tbsp Parmesan cheese

Here is how you make Summer Veggies with an Italian Flair:

In deep skillet over medium heat, cook onion in olive oil until translucent. Add garlic and red pepper flakes. Before garlic turns brown, add red wine, eggplant, peppers, and zucchini. Add salt and pepper to taste. When the veggies are slightly soft, add tomatoes and tomato paste. Allow this to simmer a few minutes while flavors combine. Just before serving, add fresh basil. If using dried basil, add along with tomatoes. Sprinkle each serving with 1 tbsp of Parmesan cheese.Makes 6 servings. Makes a great side dish to grilled chicken or fish, or it can be served like a chunky stew with crusty bread for a complete vegetarian meal.
