These are dinner rolls my great-grandmother made us on many occasions. She lived across the street from my Grandma and Grandpa (her son) and would show up just about dinner time with a fresh pan that had just come out of the oven. LOVE, LOVE, LOVE my Grandma Nina. 2 pkg. Active Dry Yeast
2 cups water
1/2 cup suger (divided)
3 tsp salt
1/4 cup vegetable oil
1 egg (room temperature)
6 - 7 cups all purpose flour


How Do I Make Nina Talbert's Potato Dinner Rolls?

Here is how you make Nina Talbert's Potato Dinner Rolls:

Preheat oven to 375 degrees F.Peel one white potato (do not use russet...find a white potato). Cut into cubes. Place in 2 cups water and bring to a boil. Once the potato is well done, drain water into measuring cup and add enough water to return to 2 cups. Once water reaches 120 - 130 degreee F, sprinkle 2 packages Active Dry Yeast into water and then sprinking 2 Tbsp sugar ontop of yeast. Gently mix. Cover and set aside for approximately 10 min. Pour yeast mix into bowl and add the remaining sugar, salt, cooked potato (mashed well), about 2 cups flour and beat will stand mixer (wisking attachment) for about a minute or so. Add oil and egg (room temperature). Beat well. Add 1 1/2 cups flour to make a thick batter. Beat well about 3 min. Remove wisk attachment and replace with dough attachment (spray with non-stick spray prior to attaching). Add 1 1/2 cups more flour and continue stirring until motor starts to labor (the dough becomes very thick). turn out onto a floured board, and knead for 5-8 minutes adding additional flour to keep it from sticking to the counter/board as needed. (This will ultimately have added 6-7 cups of flour. Amount will vary depending on humidity/time of year.) Let dough rise an oiled bowl in a warm space until doubled in size. Punch down and shape into rolls or bread loaves placing in pans prepared with non-stick spray or shortening. Cover pans and allow to rise again until about double in size. Bake rolls for 13-20 min. Bake loaves 25-35 min. Thumping the loaves should sound hollow to indicate doneness. Slice open....add butter (and honey if desired) and ENJOY!!Serving Size:?Makes 45 Rolls
