1. Preheat oven to 425*F. Set a wire rack on top of a baking sheet. Spray rack with non-stick spray.2. Peel sweet potato, then grate. Squeeze all the liquid out. The less liquid, the crispier.3. To the grated sweet potatoes, add the egg whites, cheese, pepper, and rosemary. Mix until combined.4. Scoop out potato mixture and set on wire rack. (I used an ice cream scoop.)5.
