4 oz russet potato, shredded
3 T onion, shredded
1 egg, beaten
1 t curry powder
1/2 T all purpose flour

3 T vegetable oil


How Do I Make Sweet Potato pancakes?

Here is how you make Sweet Potato pancakes:

1. Preheat oven to 250. Combine potatoes and onion in large bowl & toss to combine. Add flour & curry powder and stir into potato mixture. Add egg and combine with potato mixture.2. Heat 1/2 the oil in large frying pan over medium-high heat. Take about a 1/4 cup of the mixture and form a ball. Repeat with all mixture. Place 4 balls in frying pan when oil is hot & shimmering. Flatten the balls with bottom of spatula. Flip after 3 minutes. Cook 3 minutes on other side. Remove pancakes from pan and place on paper towel to absorb oil. Transfer to baking sheet & place in the oven to keep warm while the other pancakes cook.3. Repeat cooking process with 4 remaining balls of pancake mixture.
