Here is how you make Forbidden Rice Risotto:

In a saucepan, melt the butter over a medium heat and sauté the shallots until translucent, about 5 minutes. They should not brown. Add the forbidden rice and cook for another minute, stirring well so that the rice is coated with butter and shallots. Deglaze the pan with the wine and stir constantly. When the wine is all reduced, reduce the heat to medium-low and add the warm chicken stock, ½ a cup at a time.
