What Are The Ingredients For Veggie-Rice Pilaf Recipe?The ingredients for Veggie-Rice Pilaf are: Butter, 1 1/2 tbspCarrot, 1 or 2, diced Onion, 1, diced Salt, pepper, and thyme, to taste Long-grain white rice, 1 1/4 cup Chicken or vegetable stock, 1 1/2 cup Water, 3/4 cup Broccoli, 2 cups chopped Green beans, 1 1/2 cup chopped Bell pepper (red, orange or yellow), 3/4 cup chopped Old cheddar Cheese, 1 cup shredded (or havarti or gouda) How Do I Make Veggie-Rice Pilaf?Here is how you make Veggie-Rice Pilaf: Melt butter in a large pot over medium heat. Add onion, carrot, salt, pepper and thyme. Cook til onion is softened, about 3-5 mins. Meanwhile heat water and stock (microwave is fine).Add rice, stir to coat in butter and heat 1 min. Add heated water and stock; cover and bring to a boil. Reduce heat and simmer 15 minutes without uncovering. Working quickly, add chopped vegetables to pot and stir. Put cover back on pot and cook for 5-10 minutes or until rice is done and liquid is absorbed. Let sit 2 minutes.Add 3/4 of cheese, stir til cheese is melted. Transfer to serving dish, sprinkle with remaining cheese.*You could make this healthier by using brown rice, but this will alter cooking time.
