1. Combine chopped vegetables in a large mixing bow.2. In a separate bowl, whisk together olive oil, balsamic vinegar, garlic, salt & pepper.3. Pour marinade over chopped vegetables and allow to set for a minimum of 30 minutes.4. Pour veggies on cooking sheet and bake for 30 minutes at 425 degrees for 30+ minutes.
